Collecting money owed to you

What is the next step in collecting funds owed to you, for professional services? The customer is way past due & has been sent all the collection letters. Next step is legal action. Not sure how to go about it... file a lein or a judgement? Help please.

My clients usually like me to do a Demand Letter, which will either get payment or their attention (payment plan offer). Do you have an agreement providing for atty fees + collection costs?
