I need to know how long can a creditor go after you? And how long do you have to keep paperwork of debts paid off?

Generally, contract statute of limitations is 6 years, but there are exceptions for certain types of debts (like revolving credit, etc.)
You should keep receipts of debts paid at least 6 years.
