Legal Question in Criminal Law in Minnesota
Can I buy my way out of STS days if I won't be able to complete them in required time? If I can't complete required days what will administrative probation officer do? Will I go to jail?

That is entirely up to the prosecutor and the Judge. The terms of your sentencing must either be resolved by negotiation which is then made part of the sentencing order by the Judge or by filing a Motion and seeking such a modification.
Hopefully you are on good terms with your probation officer. Your underlying reason for not completing that portion of your sentencing conditions and terms is not known. It is the judge who is the decision maker and decider. You may hire an attorney to assist you. We lawguru attorneys are available.
