What are the consequences if an eighteen-year old is found guilty of fighting/assault in Minnesota?

An eighteen-year-old would not be prosecuted in juvenile court. There are more than five severity levels of assault in Minnesota, from the most severe felony-level, down to misdemeanor fifth degree and domestic assault. Depending upon what the assault charge actually is, the penalty could range from a maximum of 20 years (assault 1) to a maximum of 90 days for misdemeanor assault. It is rare to get the maximum for a first offense. Generally, if convicted the person could lose the right to possess a firearm, and could face deportation if not a full-citizen.
