Jail ''good time'' credit
Can earned good time on a jail sentence be taken away if there is an infraction of the rules

Yes. For example, see Minnesota Statutes Sectoin 244.04 "Good Time," and related Minnesota Rules for the Minnesota Department of Corrections.

Note that different legal bases may apply for non-felony convictions, but good time reductions for misdemeanor sentences of over ten days could also be taken away for violations.
