I have an employee who would like to take the summer off to work elsewhere but is saying I have to give her her job back when the other job is done. Is this correct?

In Minnesota private employees are employed "at-will." Employment may be terminated by either employee or employer at any time for any reason (or no reason), unless there is a contract or other law that governs. You would not be required to give her her job back if she is an employee at-will, and there is no contract or statute involved. You should contact an attorney to review further.
