can getting any type of public assistance like food stamps and housing hurt my chances to ever be able to get a green card and becoming a resident?

It can because you need to be able to prove that you will not become a "public charge" in other words that the state will not have to permanently support you. When you apply for your "green card" you will have to submit an "affidavit of support" that demonstrates that either your or someone has sufficient income.
