continuances
Am I required to grant a continuance because the officer who wrote my ticket can't make it to court on that day?

No.
In fact you have a constitutional right to a speedy trial. If you don't waive your right, they might have to go ahead with the trial without the officer.
If it is a matter of a delay of a relatively short time, the judge might grant the delay and say your trial is still speedy enough.
But don't agree to any delays. Don't let them say you waived your right to a speedy trial.
