Is there a way to get papers drawn up so that if a single parent is no longer able to take care of her child, or will not take care of her child, or dies, that the grandparents of the child can get custody of the child and not the biological father?

No. The rights of the biological parent are superior to all others in child custody matters. The best interest of the child should always prevail, but there is no document you can draw up �giving� custody to any other party. Only the Chancery Court can make this determination.
