can i legally request all my old emails from a previous employer? They are refusing to pay me for vacation time they approved and agreed to pay. The emails would show they approaved it and agreed to pay

You can definitely "request" your old emails; whether the employer provides them, or claims they are lost, is another matter. You may want to contact your local employment development or labor department to put in a claim for unpaid vacation time. Let your tax dollars start working for you.
