How do I prosecute a person who hacked my business website and changed and deleted vital business information?
I have the IP numbers, originating from the same computer, dates and times of hacks.

You should probably talk to your local prosecuting attorney. If you desire to sue them and collect damages, you can see a civil attorney who can help you in that regard.
If you want them to go to jail, that has to go through the prosecuting attorney for the county where the crime was committed, in this case, the county where you live.
