once you have been served a summons can you still work with them to lower your amount?

When a creditor files suit, they want to get paid. There is nothing in the law that prevents them from working out an agreement with your prior to the docket call. However, if they feel they have a strong case, they may not be willing to compromise the amount they seek.

Once you are served a summons, you should hire an attorney! No exceptions! The attorney will save you more money than the attorney will cost you!
