I live in Missouri. Recently, after closing hours at a club, a police officer was in an argument with someone that had clearly been drinking. The cop repeatedly kept telling him that he needs to get in his car and drive away, to which the man said, "I'm not falling for that, that's entrapment." The cop replied that there is no entrapment law in the state of Missouri. Is that true?

Entrapment is a defense to an accusation of a violation of law, not a law in itself. In the cas eyou described, it appears that both the officer athe patron wer factually correct. But, it seems odd that the officer woudl suggest that someon they percieved as intoxicated get behind the wheel. Hopefully, you offered the person a ride.
Good luck
