Does it do any good to write up a personal letter regarding the care of your children if something would happen to both parents during travel (notarized)?

Missouri statutes provide for a specific Power of Attorney to cover such a situation, assuming that you meant that the parents are disabled and not killed. If you meant the question to cover a situation in which the parents are killed, then you could prepare Wills that include provisions for guardians and a trust to take care of any children surviving the parents. This would be best done by an attorney to be sure that the documents that are prepared will in fact provide the protection you seek in the event that they are ever needed.
