I have a domain name registered with an active pertinent site and Paramount pictures wants me to shut it down and transfer the domain to them. What are my options?

Your options are to do as they request or not do as they request. If you do not do as they request what did they say will happen? You need to see a trademark lawyer, not ask such a vague question on lawguru that hide the facts so no attorney can make an informed response. The devil is in the details. A trademark lawyer needs to see the domain name you registered, the trademark it is alleged to infringe, and to compare the two. There is a domain name dispute resolution process using arbitrators that might be used by Paramount to force the transfer, and that is likely what they will do if you decline. They could also sue you for damages for infringement, although generally they will be more interested in shutting you down than damages Bottom line is see a good trademark lawyer or give up and shut down. Without a lawyer, you are almost certain to lose and it could be lose BIG depending on how willful and how flagrant the infringement is that you are not disclosing in your question.
