If I sign a contract saying will not be held liable, can I still sue?

If I sign a contract with a babysitter saying if my child is injured in her care, she is not liable, can I sue if my child gets hurt while in her care?

You can sue; the question is will you recover. You probably lose your claim as the parent, but the child's claim likely cannot be compromised in advance. That is probably against public policy. But, if you have any doubts about the form, do not sign it and find another baby sitter. Anyone who is thinking "I'm not liable" based on a form is probably not taking good care of your kids, and why should they: they aren't liable if they don't.
