Will/Living Trust
In 2001 I did a will & living trust as I was married with 2 children. Now I've remarried and have another child and haven't change anything. I'm leaving on a plane trip tomorrow and relized I need to admend this to show my current wife and add a new child and his living arrangements to this. Can I write out an addendum to the original and have it notized before my flight tomorrow morning and will it be submissual in court if something happened?

No, your legal documents need to be amended or redone with the same solemneties and procedural requirements that were required with the originals in order to be legally enforceable. You might be able to do a simple Codicil to change the Will, but it would need the witnesses, attestations, and so forth just as the original Will required. I wuld have to see the document you refer to as a "living trust" before I could offer an opinion about what would be needed to change th terms on that document.
It's too bad that you only thought of this at the last minute. It would only take an attorney a short time to review the documents, make the necesary changes, obtain all of the required signatures and have you ready to go!
