Legal Question in Family Law in Nevada

I have 2 children from 2 different men. My daughter is 3 and has never even met her dad and my son is 2 months and his dad doesnt want him. My sons Dad ask my fiance to just sign the birth certificate but he didnt because we didnt want legal issues to come from that. My question is do I have grounds to take their rights away totally even tho they are not on the kids birth certificates?
