What recourse is available to you if you are being sued for child support without your name on the child's birth certificate or a DNA test? Are you responsible for all months previous, and is it 18% of documented gross income?

It's 18% of your gross monthly income from all sources if the mom has primary physical custody.
Your child support may be subject to "offsets" that is a reduction based upon the cost of health insurance, if you can provide it through your job and if you have other children that you are legally responsible for and are paying for.
You can ask the DA to take a paternity test. The DA will "front" the cost of the test and charge you on the back end if you are found to be the father.
