What rights do I have as a father if I am not named on the birth certificate? Can her fiance legally adopt my son without my consent?

Short answer: none but the opportunity to create such rights. BEFORE any adoption, there should be a termination of parental rights proceeding, but you cannot count on it being done right, or even on getting notice; if you are serious about being and acting as a father to the child (rights AND obligations) file an action for paternity under NRS 126.
