What is the procedure if I receive an attachment with notice? Do I have an opportunity to defend my position before an attachment can be placed on my property?

Yes, the other side must show that they are "likely to prevail on the merits" and that you do not have the resources to pay the judgment so an attachment is appropriate and necessary.
You have to show that they are not likely to prevail and that if they do you have the resources to pay a judgment.
