While you are free to set up the LLC, actually with or without the SS#, you cannot actually work or operate the entity. The extent of your involvement can only be passive investment, like a stock owner. it is possible that this entity could sponsor your next visa or be used for your OPT, but this exceeds my level of immigration know how as I am a business and IP lawyer and you posted in business, so I would post again in immigration to get more detailed responses.
