Can I make an office manager sign a non disclosure agreement in nj to protect me from her going to another office and taking my patients?

Yes but, as with all contracts, there must be some additional consideration given for the making of the contract. Many companies choose an annual review period for giving new agreements to employees, the theory being that eligibility for a salary increase is sufficient consideration to update the terms of employment. There are other way to accomplish the same thing. Consult your lawyer for assistance.
