Paper Copy vs. Digital Copy As a Form of Proof
If I were to scan my entire paper reference archive, which documents, among warranties and financial records notably, would remain valid if I were to use the digital copy as proof?

As long as you have a documented and audited process to show that digital copies are retained (pursuant to a records management policy and retention schedule) as replicas of originals, and that you make digital copies as part of your standard operating procedure, there should not be any issues. This is a relatively complicated area, and one that requires an expert with records and information management experience.
