Is there a law in the state of NJ where children of the opposite sex cannot share a bedroom?

It is not a question of law. It is a question of life style. The female usually has her own bed when of tender years and she has her own room when at an early age. You do not want your children playing doctor and getting into habits which are not good for them. Their lives continue to happen to them while you are getting your funds together. It would be better for a female child to share a room with her mother or a male child to share a room with his father then to share a room with each other Incest is to be avoided.
You could have some serious problems here if you have older children sharing a bedroom. Most judges would be very unhappy with that.
