obtaining legal working and/or resident status

what courses of action can be taken to achieve legal working status and/or citizenship of an undocumented alien who is in love with and residing with an American citizen?

The answer depends on how the undocumented alien came to the United States. If he or she came with a proper visa and overstayed this can probably be worked out ok. If he or she came without a valid visa, this can be more problematical. A consultation with a good immigration lawyer is recommended.
