if I got a letter on the 27th of December and it said I have to bake a cake the premises in 60 days do I still have to pay January's rent on the first

A wag might say is it such a problem to bake a cake, I would leave.
If you mean vacate, no. The LL has to have a reason under the Anti Eviction Act unless the building is owner occupied and 3 units or less.
Even in that case, he still has to go to court and have a court officer evict. That will take roughly a month.
