Legal Question in Traffic Law in New Jersey

I was pulled over for speeding in NJ today 5/12/2016 @ 6pm. I was following traffic, and was very shocked to be pulled over. He asked for my license and registration and proof of insurance. I was so flustered I couldn't find my uptodate insurance or registration. After presenting, embarrassingly, an expired insurance and registration card, I continued to search but couldn't find it and told didn't have it. He then asked to see my license and the expired registration (it is renewed and no expired, I just couldn't find it.) While the officer was writing the ticket, I continued to search and found my renewed insurance card. When he re approached the vehicle he gave me two tickets- 1 for speeding 41mph in a 25mph zone (a $105 fine) and one for not having insurance. I showed him current insurance card and he told me I would unfortunately have to go to court and hopefully the Judge would dismiss it. The back of ticket says if I want to enter a plea of not guilty, I must do so within 7 days of my court date (may 25th). I definitely have my proof of insurance and I plan to fight that ticket... what should I do about my speeding ticket? Should I keep quiet and just show up to court and explain what happened with both and hope the police don't show up? What if the police do show up? Should enter a plea of not guilty for the insurance ticket and pay the speeding ticket? What should be my next course of action? Thank You
