Are attorney fees charged for probating a will a matter of public record?

Typically no. Attorney's fees, and all other estate debts and expenses are not a matter of public record in NJ. The only possible exception being if the estate files a formal accounting with the court then all the expenses would be listed in the accounting. These days it is very rare to have a formal accounting filed with the court [I would guess less than 5% of all estates, maybe less].
