Legal Question in Criminal Law in New Mexico
What citation/crime would I be looking at if, on a Texas-registered vehicle, I were to remove the front license plate and registration/inspection stickers? The registration/inspection is expired, but my insurance is still good! I am driving in New Mexico.

Having false registration of any kind is a serious crime in NM, and depending upon what you do with the stickers, could be a felony crime. The consequences of violating NM's motor vehicle laws are considerably more expensive than complying with the law and having the vehicle properly registered. What you describe is not wise nor legally safe, as you may be subjecting your car to impoundment, along with court costs, fines, and possible jail time.
