I need to have full custody of my 2 month old daughter and am unsure how to get it without going into a long courtroom process. I am unmarried but the father is on the birth certificate and wants to see her although he doesn't make responsible life choices for me to trust him all of the time.

Do the courtroom thing, there's no other way to protect yourself from harassment. You need to file a "petition to establish parentage, determine custody and time-sharing, and assess child support." Go to this link - http://firstdistrictcourt.com/Paternity%20Forms.htm to get the "parentage packet" they use in the first district court (Santa Fe). If you're in another district you just change the heading. You can also call Law Access New Mexico in Albuquerque at 18003409771 to get help over the telephone from an attorney.
The court will assign a mediator who will help you to work out with the guy the various aspects of visitation and child support. If he has convictions for drugs or other behavioral problems you can bring that up and they may require supervised visitiation, where he can only visit the child in the company of a professional. Get some legal advice. If you just let this drift you'll regret it because he can jerk you around and you will have no court protection.
