How do I go about changing my son's last name without any courts involved? Can I add my last name to his and it be hyphenated with both parents names?

Section 40-8 of the New Mexico Statutes Annotated (NMSA) is the law about name changes. You did not say how old is your child. There is a different rule for children who are age 14 and older and those who are younger. The bottom line is that you cannot legally change a human being's name without the court being involved.
