Our daughter is engaged to a man who owes $75,000 in school debt. When they marry does she assume his debt?

In strict legal technical terms the answer is no, she does not assume his debt. In practical terms the answer may not be the same. This is a very good question to ask an attorney in terms of this couple considering a prenuptial agreement.
