Business transactions

I work for a venue and we keep track of all holds as well as confirmed events with booking numbers. Is it illegal to delete the events that are holds or are we required to keep record of these transactions as well (whether they have a contract or not)?

As a matter of good marketing practice, you should probably keep at least a listing of your events, but I know of no law that requires you to maintain this list.

By all means you should keep track of your current "holds." These mature into full events, and you will need to have the promised space available for the customer. If you put a time limit on the hold within which the customer must confirm and sign the contract, as most event venues do, and the customer does not confirm within the time limit, then, of course, it's fine to release the hold.
