If I countersign a contract and deliver it via email, does that constitute a binding agreement, or does the document need to be delivered via regular postal mail?

You need to review the contract. It should specify how notices, changes, etc. are effective. To be safe, you should follow this procedure. Consult with a business attorney in your area for specifics.

The law neither forbids forming a contract via email nor requires the use of regular mail. The parties can agree to such restrictions, though. The courts would probably enforce such an agreement if it was made properly.
