Does an email with financial agreement terms between an individual and a company constitute a binding legal contract between the two parties?

That depends upon the circumstances - it could, but doesn't necessarily.

It could as it would satisfy some requirements by the concept known as "the statute of frauds." The language of the email and the intent of the parties need to be examined.
