Re: 21 year old first time shoplifting
It depends on the claimed value of the merchandise involved and some other facts. Typically, if the combined value is $200.00 or less and it is your only offense, you will probably be offered an alternative charge and sentence not involving jail or a record. It is higher in some counties. It could be different with some "judges" in the village and town courts.
This is not legal advice as there is no current attorney client relationship.

IT is unlikely you will go to jail for a first offense unless you tried to shoplift over 1500 dollars even then you do not have to go to jail for the offense. The best insurance against jail is to hire a good lawyer who knows how to handle a criminal case and who is not going to just take your money and plead you guilty.
Good Luck.
