Because the only issue at trial is whether the DA proves guilt beyond a reasonable doubt.

A not guilty verdict doesn't mean the jurors believe the defendant is innocent, even though in some cases they do. All it means is that they weren't persuaded of her guilt beyond a reasonable doubt. Jurors who believe the defendant is guilty but who have reasonable doubts about her guilt are supposed to vote for acquittal. It is thus possible (and proper) to get a unanimous not-guilty verdict even when all of the jurors believe the defendant is probably guilty.
