if i stole over $300 but payed it back and it is my first offense, what is going to happen to me?

It depends on the jurisdiction of the Court. In the NYC area, you probably will receive a non-criminal violation and a fine and perhaps community service. Many other factor could come into play like your age or did you pay it back before your arrest.
You will probably be charged with petit larceny.
You will likely be charged with a misdemeanor"petit larceny". You should retain a competent criminal defense attorney. That attorney will negotiate so as to prevent you from having a criminal conviction on your record. The fact that you made restitution enuers to your benefit ,but does deny you any opportunities to deny the allegations at a trial. That being said your only option is a skillful plea negotiation.
