Legal Question in Criminal Law in New York
Three years ago I made the only and worst mistake of my life by stealing from work and being caught, I signed a paper of employee theft three years ago an no police was called so I know I don't have a criminal background but I was wondering in I could apply for a gun license would I get denied

If I understand you, you signed a confession for the employer but no complaint was ever filed with the police or the district attorney's office and you never appeared in court. If these are the facts as they exist then you do not have a criminal record or background. It is most likely that your employer had you sign the document to avoid you being able to apply for unemployment or claim that you were fired for anything other then for cause.
You can file a request for your record with the New York State Office for Criminal Justice Services.
I do not believe you have a criminal record and that you will have any problem if you want to apply for a pistol license based upon this incident.
