my soon to be ex has begun recording our phone conversations without my consent. Is there anything i can do to stop him from doing this?

It is illegal to record someone's conversation with an electronic device without at least one of the party's consent. Unfortunately, there are very few law enforcement agencies that would actually pursue these as crimes. So there is not much you can do unless and until he attempts to use against you in court.

Not in NY. It is legal as long as one party is aware of the taping.
