I'd like to know if I can sign over my pension and social security to my ex-wife, when I die.

Social Security is governed by Federal Law and not assignable by an individual to a party not authorized by law. As for your pension, you will need to contact your pension administrator to determine if you can place a beneficiary on the pension or if there is a death benefit that can be listed and whom is elegible.
