Husband not working and incurring lots of debt
I wonder if there is some sort of legal document I can have to shield me from my husbbands debts incurred by borrowing from credit cards as he refuses to get a job.

If the credit cards are in joint name, no. What you should do is get a credit card in his name alone and transfer charges onto his credit card. You should also have your own credit card that he should not have access to.
