how do i prove my x husband is working off the books

You probably do not want (or need) to prove that your Ex/Husband is working "off the books."
A Court can "impute" or "charge" your EX Husband with having an income, based upon evidence presented, of your Ex's lifestyle, assets, standard of living etc., demonstrative of "high" income.

More info required. There is no set way, you may need proof from the job, his spending, his account balances, etc.
