We had sole custody of our niece for 5 years and are now going through court process, because she didn't want to live with our rules. her mother now has her and she never gave us a dime to take care of her daughter for 5 years, can we claim or get any restitution?

It is very unlikely. You had no duty to take in your niece, you did so voluntarily. There is no legal obligation for you to support your niece. Only her parents can be obligated to pay support. It is unfortunate that her mother did not assist you financially, but there is no recourse under the law.
