Is an email (in which one party promises to pay another party a sum of money) admissable as a promisory note in court?

a plain email without a signature would be some evidence that a promise was made, but would not constitute an actual promissory note which is a legal instrument.

It depends upon the circumstances. While the e-mail will likely be admissible, whether it is a promissory note or not is something that can't be determined from the information given.
