Is it legal to force an employee to take on the company's Health Insurance provider? What if they are already covered under their spouse's insurance?

You should be able to advise your employer that you do not wish to pay for the insurance coverage because you have coverage elsewhere. However, if the medical coverage is being paid for by your employer, your employer is not required to increase your pay as an alternative.
