Legal Question in Intellectual Property in New York

I have developed a prototype for a board game that may be used by an organization. Before I submit my idea to the organization, what steps can I take to best protect that the organization doesn't take my idea without paying me?

You did not mention what is your current relationship with the organization and the nature of the organization. These are important considerations in assessing your rights and possible protections.

In general, at the very least you need to enter into a non-disclosure agreement with the organization. You should consult with an attorney admitted to practice in NY to draft such an agreement. Feel free to contact my office at your earliest convenience.
