If I take photographs of my collection of Nutcracker dolls, can I sell the photos as stock photos or use them in the creation of a computer game? Does the creator of the dolls retain any rights?

Why not contact the manufacturer and just ask for permission? It's free publicity for the manufacturer and you're covered legally. I always advise clients to begin by simply asking for permission from the person/ company that created something.
It's the right thing to do and it can save you a ton of time and money in the long run. If they say "no", then you can begin your analysis. But why waste time finding an answer to a question that you can avoid asking in the first place?
