What is the employee right if employer cancels an education reimbursement benefit after providing the employee with a signed contract stating a full reimbursement?

It all depends on where the employee is with respect to taking an academic course. For example, most employers will reimburse the employee if the cancellation occurs after the college's add-drop period. As to legal remedy for other possible damages, it all depends on the terms and conditions stated in the contract.
